Cold Weather Staples ~ Savory Soup Stock (Vegan) | Garlic and ...

Is this your idea of a good meal?

Am I the only one who used to have a love for instant noodle bowls?? Not the plain old ramen in a plastic package either.? I mean the large styrofoam bowls of noodles with those seasoning packs that tasted like chicken, beef, or shrimp.? I knew it was good when you put the boiling water over the noodles, added the seasoning pack, and the streak of orange oil would appear.

I have been making my own stocks and soups for at least 2 years.? Nowadays, I would not be caught dead in the canned soup aisle of any grocery store, anywhere, for any reason.? It just doesn?t make any sense!? Soup is quite simply the easiest thing in the world any virgin to the kitchen can make without screwing it up too badly.

What is stock?

Stock is nothing more than vegetables and/or meat and bones boiled in water to concentrate the flavors.? The stock is used? as a base for your soup.? But it can also be used to boil rice and cous cous, braise vegetables and meats, or make a simple broth.? The difference between a stock and a broth is that stock does not have any salt.? Salt is what makes food taste good (in limited quantities, of course!) so we are not likely to drink stock by itself.? However it is not strange to see someone sipping on a broth ? particularly when that person is feeling under the weather.

Why should I make my own stock?

Have you ever looked at the ingredient list on a soup can???? The amount of ingredients in some of these things is a bit long, and some of the ingredients unpronounceable.? Some companies are still using MSG as a flavor enhancer in their soups (including the noodle bowls and ramen soups).? MSG, or?Monosodium Glutamate, is a neurotoxin used in many processed foods.? The orange oil in the noodle bowl I mentioned earlier is palm oil ? one of the unhealthiest oils you can eat.? In addition, the salt content is usually ridiculously high.? Making your own stock allows you to use your own ingredients and control the amount of salt you want to use in your final dish.

I remember my first trip to see a naturopathic doctor for my fibroids (long before I recognized that is what was causing all of my abnormal bleeding).? She did a food history session with me to see what I was eating.? As soon as I told her about my love for noodle bowls, she said I had to cut them out immediately.? I was so clueless at the time about food that I actually felt a bit worried about what I would replace it with.? If I can?t depend on some company to serve me my microwaveable noodles in a styrofoam bowl, I thought, what else is left to eat???

Preparing Your Stock

You don?t need anything fancy to get your stock started.? In fact, all you need is a few kitchen scraps and some water.? I take the odds and ends of greens, onions, garlic, carrots, herbs, etc. and store them in a plastic bag in the freezer.? At the end of the week, I have filled the bag pretty well with items that will make the stock full of flavor.? That would make the most basic stock.? But, of course, I don?t do basic in the kitchen (easy, but never basic?).? If you are feeling a little adventurous with your soup, give this recipe a try!

Savory Soup Stock (Vegan)

An easy soup stock anyone can make!

Ingredients

  • 8 cups filtered water
  • 1 bag of vegetable scraps
  • 2 heads garlic
  • 1 inch piece of ginger, grated
  • 1 cinnamon stick
  • 1 tablespoon cardamom seeds
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • 1 large onion, halved
  • 4 large carrots, chopped

Instructions

  1. Put the water in the pot.
  2. Add the remaining ingredients.
  3. Put on medium high heat until boiling.
  4. Lower heat to a simmer for one hour.
  5. Allow the mixture to cool.
  6. Strain the mixture.
  7. Throw away the food scraps.
  8. Store stock in the refrigerator until ready to use.
